Southern Sweet Cornbread

Well hi folks, been forever since I've made a post.  So much has happened since then, new great grandchildren, deaths and so much more.  So many life changes in our family, and now this Cornavisus affecting our country.  What's next????

We celebrated Easter this past Wednesday b/c one of my grandsons had to work Easter Sunday, he is a correction officer and the county jail and is just 20 years old he also turned 21 the end April.  Wow where have all the years gone??

I made this cornbread for our dinner, which was a hit.  It was made in a cast iron skillet but you could make it in a cake pan, probably wouldn't have the great bottom crunch but the flavor would still be there. I found this recipe on Pintrest here.  This was very good but I also think it could have been a bit sweeter, so next time I will probably add and additional 1/2 cup sugar.

Ingredients

  • 4 eggs
  • 1 cup milk
  • 1 tsp. vanilla extract
  • 3/4 cup melted butter
  • 1 cup cornmeal
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 Tbs. baking powder
  • 1 tsp. salt

Instructions

    1. Preheat your oven to 350F, grease the skillet and place in the oven to warm up.
    2. In a medium-sized mixing bowl combine the flour, cornmeal sugar, baking powder and salt and mix well.
    3. In a large mixing bowl combine the eggs, milk, melted butter, and vanilla and mix well.
    4. Slowly stir the dry ingredients into the wet ingredients and mix until combined but still lumpy.
    5. Pour into your hot skillet and bake for 30 to 35 minutes or until golden brown on top and a toothpick comes out clean in the center.

brotchen *german hard rolls*



I made these when I made the crock pot apple pork roast.  They really are good, easy to make and also make a great sandwich.  Give them a try they're really a great addition to any meal.

Directions

  1. Preheat oven to 450°F.
  2. Pour 2 1/2 cups flour into a large bowl and form a well in the center.
  3. In a separate container, mix yeast, sugar, and two tablespoons water (water comes from the 1 cup above).
  4. Pour yeast mixture into the well but do not mix with the flour at this time.
  5. Cover bowl with a cloth and set it in a warm place for 15 minutes to rise.
  6. Add remaining water and oil and beat until mixed. Add SALT.
  7. Turn dough out onto counter and knead until smooth. Adding remaining 1/2 cup flour as needed.
  8. Put dough in bowl, cover and let rise until double in size. (about 30-40 minutes).
  9. Punch down and divide dough into 12 parts.
  10. Shape into oval rolls and place 3" apart on greased and floured cookie sheet.
  11. Cover and let rise until double in size.
  12. Beat egg white and 1 tsp water with a fork until frothy and brush onto rolls.
  13. Bake for 15-20 minutes or until golden brown.
  14. The time is an estimate, depending on how fast your dough rises.

Traditional Irish Soda Bread





We always have our corned beef, cabbage and mashed potatoes on St. Patty's day and this year I decided to try and make Irish Soda Bread.   After reading the ingredients to me it's really just a giant scone.  Looks real pretty when cooked and I used a cast iron pot to cook mine in *they say that's real traditional too*.


This recipe goes together quickly and really is a no fuss bread to make.

4 1/2 cups flour
1 Tsp baking soda
1 TBL sugar
1 tsp salt
1 cup raisins
1 3/4 cup butter milk (I made my own with half and half water and vinegar)
4 TBL very cold butter
1 large egg

Irish Soda Bread Muffins with a twist



Found this here and made these St. Patty's day because my son in law doesn't like raisins.  He loves spicy things so thought these would be a good choice.  She made 12 regular size muffins but I decided to do the 6 extra large.

3 cps flour
1 TBL baking powder
1 tsp salt
2 TBL sugar
1/2 tsp baking soda
1 3/4 butter milk
1/4 cup butter melted
1 cup shredded cheddar cheese
4 chopped jalapenos

Preheat oen 375° line muffin tin or spray
sift dry ingredients .  in another bowl mix buttermilk and egg, stir into dry ingredients, fold butter into batter.  Stir in cheese and jalapenos but don't over mix.  Fill muffin tins 3/4 and then bake for 30-40 minutes until toothpick comes out clean.

Crusty Italian Bread




Way back when I made those stuffed shells I had extra, which I froze.  Well we had them on a Sunday on my day to cook.  Made this bread to go with it.  It's so yummy...nothing better than fresh homemade bread right out of the oven with some butter.  You could eat the whole loaf...I know you could, cause I sure can.    I mixed the dough in my KA food processor.  Worked out great. 




Crusty Italian Bread
makes 2 loaves
1 1/3 cups warm water
2 1/4 teaspoons yeast
1 Tablespoon brown sugar
1 1/2 teaspoons salt
1 1/2 teaspoons olive oil
4 cups flour
Place warm water, yeast and brown sugar in mixing bowl. Stir and let stand for a few minutes until it start to bubble and foam a bit. 
Add olive oil and salt.  Mix and add the flour gradually.  You want to add enough that the dough comes away from the sides of the bowl.  You want to mix it with the dough hook for a few minutes.    
Cover and let the dough rise until doubled about 30 minutes.
Punch down dough and divide in two and form into two loaves (I doubled the recipe this time.)   Cover with a damp cloth and let rise until doubled.
Preheat oven to 375 degrees.
Beat together:
1 egg
1 Tablespoon water
Brush the risen loaves with the egg mixture.
Make a single long quick cut down the center of the loaves with a sharp knife.
 Place at least 1 cup hot water in a shallow pan and place it on the rack underneath the bread.  The steam will make the crust turn perfectly.  You may need to add a bit more water during cooking. You do not want it to evaporate.
Bake for 25-30 minutes or until the loaves turn golden brown and sound hollow when you tap them.
If you can place them on a rack to cool a bit, this is very difficult I know all to well.  Then slather with butter and enjoy.

Challah *quick*


A friend posted this on FB and I thought I'd see if it really is quick...Yup sure is and so simple.  Made in a big so there's no mess to clean up  How great is that and the added bonus is that it tastes as good as it looks.
Give it a try you won't be sorry.

INGREDIENTS (1 challah)
1 tbsp. yeast
1 cup warm water
3 tbsp. sugar
1/2 tbsp. salt
1/3 cup canola oil
3 cups all-purpose flour + 1/4 cup
1 egg for basting (optional for vegan challah, substitute olive oil)
Sesame seeds for topping
PREPARATION
1. In a 1 gallon plastic ziplock bag, add the yeast, water, sugar, salt, oil and 3 cups of flour.
2. Give the bag a little shake. Don’t work too hard- remember, it’s a lazy challah!
3. Place the bag in a bowl of warm water for 30 mins. The dough should be very wet. It will start to bubble and self-knead. WHOA.
4. Add the 1/4 cup flour and give the bag another shake.
5. Leave the bag for 1 hour to rise. This step can vary depending on the temperature in your house, so let the dough rise until it looks kneaded. It should still be a wet dough. You can flip the bag over every 20 mins to help it along.
6. Preheat oven to 300F/150C
7. On a floured surface, separate the dough and stretch out 3 strands. Braid.
8. Baste with egg and sprinkle sesame seeds (optional for vegan challah, substitute olive oil). Leave to rise for 15 mins (optional but recommended).
9.  Bake on a non stick tray for 40 mins or until golden on top.
I served this with the stuffed shells which will be coming soon.

Buttermilk Biscuits


I found this recipe on FB the only thing I changed was I didn't have buttermilk so I made my own. Wow Are these awesome...the family loved them too.  Very quick to make and well worth it.


Ingredients:
2 1/3 cups self rising flour
8 TBL sugar
1 stick butter, frozen *if you use unsalted add pinch of salt to recipe*
1 1/3 cup buttermilk * I used 2/3 cup half and half 1/2 cup water and 1 1/2 tsp cider vinegar *
1 cup of AP flour for coating.
1/4 melted butter
Directions:
preheat oven 425° line  bottom of 8x8  pan with parchment paper and have two sides over hang.  Butter bottom, set aside.
Mix flour and sugar together, grate frozen butter into flour, knead with hands to get butter incorperated but don't over work.  Slowly add buttermilk and mix til combined...AGAIN DON'T OVERWORK.  This dough will be very wet.  On a large piece of wax paper or a cookie sheet spread out the 1 cup of flour.  Using two large spoons drop dough on flour *made them the size you want your biscuit to be*  gentle shake them around then pick them up and toss them gently from hand to hand they will make into a ball on their own.  Place in pan, make sure they are all touching.  They should make about 16 good size biscuits.  Bake for 25 minutes or until just light golden brown, remove and brush with butter and return for another 4 to 5 minutes.  Immediately remove, separate and enjoy.

Hope you try these, the family kept saying these are the best, and oh boy would they be good as biscuits and gravy, with apple butter, with jelly, with bacon, egg and cheese.  So see a very big hit.

Basic Butternilk Quick Bread w/many variations

 

Basic Buttermilk Quick Bread

Makes one loaf
2 cups (10 oz) all-purpose flour
1/2 cup (4 oz) white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup (8 oz) buttermilk
1 large egg
1/4 cup (2 oz) unsalted butter, olive oil, or vegetable oil
Heat the oven to 350°F. Grease or spray with nonstick cooking spray a standard 9x5 loaf pan.
Whisk together the flour, sugar, baking powder, baking soda, and salt in a medium mixing bowl. Melt the butter, if using. Whisk it in a separate bowl with the buttermilk and the egg.
Pour the liquid ingredients over the dry ingredients. Gently stir and fold the ingredients until all the flour has been incorporated and a shaggy, wet batter is formed. Be careful not to over-mix.
Scrape the batter into the prepared pan and pat it into the corners. Bake for 45-50 minutes. When finished, the loaf should be domed and golden, and a toothpick inserted into the center should come out clean. Let the loaf cool in the pan for 15 minutes before removing and slicing.
Wrap baked loaves tightly in plastic wrap and store at room temperature. Baked loaves can also be wrapped in plastic and aluminum foil and frozen for up to three months.

Basic Variations:
 You can be reduce the sugar to a tablespoon for more savory breads.
Up to half the flour can be substituted with an alternative flour.
 Replace the buttermilk with a mix of yogurt and milk or milk and a squeeze of lemon, milk and sour cream. 
 Use up to 1 1/2 cups fruits, nuts, olives, cheese, or other ingredients, added to the dry ingredients. Use 1-3 teaspoons of herbs or spices, added to the dry ingredients.  Just use your imagination.

These were good but I felt they were missing something, what that something was I don't know.  :)

Chocolate Chocolate Zucchini Bread



It was time again for some trading with my friends.  This time they had tomatoes and zucchini.  My friend Dan wanted some more of the jalapeno chedder bread and some sort of sweet bread.  So since he gave me a big zucchini I made him this Chocolate, chocolate zucchini bread and some lemon poppy seed zucchini bread.  That recipe will be posted soon.  He said it was the best sweet bread so far and has just called and wanted more.  :)  if you look at the picture you can see the lemon poppy seed muffins in the back.  this is a very quick and easy recipe to put together, so it has become my go to recipe.  I've made this with different ingredients.  I've been using this recipe for such a long time I don't remember where I originally got it.

Chocolate Zucchini bread
1/3 cup veg. oil
1 cup sugar
2 eggs
1 1/2 cup grated zucchini
1/3 cup milk or water (I use heavy cream and water 1/2 to make 1/3 cup)
 1 tsp vanilla
1 2/3 cup AP flour (could use some whole wheat also (1 cp AP 2/3 whole wheat)
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 tsp sinnamon
1/4 tsp ginger
1/8 tsp cloves
1/4 cup cocoa powder
1/3 -1/2 cup chocolate chips
1/3 cup chopped nuts (walnuts, pecans, almond)
Directions:
Preheat oven 325°, spray a loaf pan set aside
In a large bowl whisk the oil, sugar, eggs, zucchini, milk and vanilla.  Combine the dry ingredients then stir in dry ingredients to wet mix.  Bake at 325° for 55-60 minutes until tooth pick inserted comes out clean.
Let cool in pan for about 5 minutes, then remove and cool rest of the way.  Enjoy.

Pineapple Bread


I made this for my friend that brings me eggs.  I took one of  my banana bread recipes and doctored it for this.   I was amazed how good it turned out and everyone just loved it so I will be making this again.


 Preheat oven 350 ° spray 2 loaf pans set aside.
Ingredients:
1 1/2 cup fresh pineapple
1 stick unsalted butter, soft
1/2 cup apple sauce
3 1/4 cup AP flour
1 tsp salt
2 tsp baking soda
2 tsp vanilla
1 1/2 cup brown sugar
3 eggs
1/3 cup finely chopped walnuts

In food processor pulse pineapple until you get a mash.  In a large bowl cream the sugar and butter, add eggs, vanilla, applesauce and pineapple.   Mix well.  Combine dry ingredients then add to  wet ingredients.  Stir in nuts and mix just until combined.  Spread into loaf pans and bake for about 50 minutes until toothpick inserted in center comes out clean.  Cool then remove from pans and enjoy!

crusty Italian bread



This is one of the easiest breads I've ever made.  You can add spices and cheeses to it if you so desire.  Once you'll make this you'll wonder why you've never tried making bread before.  I made this the night I made the spinach stuffed shells with Vodka Cream Sauce, which I will post very soon.


2cups-ap flour
1 tsp salt
1heaping tsp yeast
2cps warm water

Directions
Mix dry Ingredients then add water, stir.  Cover with towel and let rise for 4 hours.   Preheat oven to 500 and have a couple of cups of water hot water in an oven proof pan on the bottom rack of oven.  Flour surface really well and try not to overwork dough, it will take the gases out .  Also be sure your hands are well floured because the dough is really sticky.  On a parchment lined cookie sheet shape your loaves or use a bread sleeve.  Place in oven and spray some water inside before closing.  In 5 minutes spray again.....this makes for a wonderful crusty exterior and a great crumb inside.  Bake for about 30 minutes but keep an eye on the bread that it does not over brown.   Enjoy.

Orange Spice Bread


I took one of my pumpkin spice bread  recipes and adapted it to make this bread.  I love orange desserts and bought some oranges last week when they were on sale so what better to do with them then bake.  Of course, they're good to eat too.
This bread has just enough spice and orange flavor and is very moist.  The recipe goes together very quickly too so if you're looking for a quick bread to make this would be one.  I would guess that it would freeze well also.

Ingredients:
 1 1/2 oranges, peel and all (make into puree)
1 Tbl water
1/2 cup sour cream
2 whole eggs
1/2 cup water
1/2 cup vegetable oil
3 1/2 cups AP flour
2 tsp. baking soda
1 1/2 tsp salt
1 tsp ground cloves
2 tsp. cinnamon
1/2 tsp ginger
1 1/2  tsp fresh ground nutmeg
1/2 cup chopped walnuts (optional)



Directions:
Preheat oven to 350 degrees and spray two loaf pans.  You could also make these into muffins, large or small.
In blender put oranges which you cut into pieces and 1 TBL of water and puree.
Add this to a large bowl with the eggs, water, oil and sour cream, whisk until
well blended.  In another bowl mid all the dry ingredients.  Add the dry ingredients to the wet ingredients.  Mix til blended, don't over mix.  Add nuts.
Spread into loaf pans and bake for about 45-55 minutes until golden and toothpick inserted comes out clean.
You can put a cream cheese frosting on these loaves if you like or a sugar glaze, eat it plain or put some butter on it,  just enjoy.

Breakfast Anyone?


French Toast...Yum
I usually make white bread at least once a week, sometimes more depending on how much the kids eat.  Josh, my oldest grandson can eat a whole loaf at one sitting.  Well anyway I had bread sitting on the counter and was hungry for this so I made one slice with the white bread and one with the Italian Bread I made the other night .  All I can say is YUM, YUM, YUM.  Whenever I cook the dog comes down to see what there is to eat...too funny.  I like my french toast with sugar and butter, I know most people eat theirs with syrup.
Very easy to make and I'm sure many have made this but sometimes we forget the easy, yummy recipes.

and a very close up....you can just about taste it, huh?


I used 1 egg, 2 or 3 TBL heavy cream and just a dash of vanilla extract.  (don't use to much vanilla or it will over power the wonderful taste, or you can just omit it)  Dip bread slices in and soak until nice and moist. Heat a skillet add some butter and cook until nice and golden brown on each side.  Remove add butter and your topping....and Enjoy.

30 minute dinner rolls

OMG this are wonderful.   Monica you've got to try these.  No kneading and yes really ready to eat in 30 minutes.  The way Jake loves bread he'll really enjoy these.   I was experimenting with a new chicken salad recipe and needed some bread to put it on.  I made this recipe into two different things.  One was these dinner rolls and the other is a cornucopia shape roll to stuff the chicken salad in.  I'll post that recipe very soon.  I found this recipe here which I found through Coleens's site.  As you can see they found it at another site.  So guess this one has made it's way around the net.

Ingredients:
1 1/8 cups plus 2 tsp. Warm water
1/3 cup oil
2 Tb yeast
1/4 cup sugar or honey
½ tsp. Salt
1 egg
3 ½ cups flour
Directions

Mix 1st 4 ingredients and let rest for 15 minutes. Add salt and eggs - gradually add flour. Shape into dinner rolls, or use in your favorite recipe that calls for dough. After shaped, let rest for 10 minutes. For rolls, Bake 10 minutes @400 degrees ‘till golden brown. 
You might want to put the first 4 ingredients in a medium sized bowl...I left mine in a 2 cup measure and look
As you can see it did go higher than the picture.  By the time I got the camera it started to deflate. 


The dough is fairly easy to work with.  If you need to just add flour to your hands when shaping the rolls.  Mine only made 7 in this picture because I used dough for the cornucopia rolls, so I would say you would probably get 12 or so good sized rolls.

I put a little milk on top and sprinkled poppy seeds on top, just because.

Super Moist Banana Bread



One of our local grocery stores has banana's on sale every Thursday, they are only 19 cents a lb., with the fall weather coming on it seemed like a good time to make some comfort food.  Banana bread is just so yummy and you can add different things to it to enhance the flavor.  I've listed some in this recipe but I only used the nuts and sour cream in this one.
Ingredients (Makes 1 loaf)
1/2 c. Butter, softened (1 stick)
2/3 c. Brown sugar
2 eggs (beaten)
4-5 extremely ripe bananas (the blacker the better)
1 3/4 c. All purpose flour
1/2 t. Salt
1 t. Baking soda
2 t. Baking powder
1 t. Cinnamon
1/2 c. Walnuts or pecans (optional)
1/3 cup raisins (optional) 
1/4 cup chocolate chips (optional)
1/2. C sour cream (optional if freezing)
I did not use the raisins or chocolate chips this time.
Directions:   Pre heat oven 350 degree grease and flour 9x5x3 loaf pan
In a large bowl cream brown sugar and 1 stick of butter.  Stir in beaten eggs and 1 Tsp. vanilla. (if you use the sour cream add it after vanilla, gently fold it in.  Mash the banana's and add them to the mixture.  (the riper the banana's the sweeter the bread)
In another bowl mix dry ingredients and add the nuts. (I used pecans)   Slowly add the flour mixture to the banana mixture, about 1/2 each time.  Gently mix the flour mixture into the bananas until all incorporated.  DO NOT OVER MIX (over mixing makes the bread become very dense)
Pour the mixture into the prepared pan and let it rest for about 15 minutes before putting into the oven.  A VERY IMPORTANT STEP, don't rush it.  You will be very happy with the results if you give it the rest time before baking.    Then bake in oven for about 1 hour, or until toothpick inserted comes out clean.  Mine took about 1 hr and 3 minutes.  When it comes out of the oven spread some butter on top and let it sit in the pan for about 20  minutes before removing to a cooling rack.  Try not to cut into the bread until it is cooled.  (A little warm is ok) If you cut it while it is still pipping hot you will let all the steam out and the bread will be a bit dry.  I know it's a hard task having to wait but you'll be happy you did.  After you remove it from the pan dust it with confection sugar and then when cooled ENJOY!

Whole Wheat Sandwich Rolls


This past weekend I made 117 rolls for my grandson's football team, yup you read it right 117 .  They always have something for the kids to eat after the game..usually they have hot dogs and hamburger, some sort of salad, chip and cookies.  This past weekend my daughter thought it would be nice for a change and have sandwiches and asked if I'd make the bread.  :)  of course I said yes.  I made white sandwich rolls also.  The recipe that follows can be used for both the wheat and white.  I'll post the difference in the ingredients if you want to try them.
 Whole wheat rolls     bake 350 for about 25 minutes  makes approx 19-24 rolls
Ingredients:
2 cups warm water about 115 degree
1/3 cup white sugar
1/3 cup honey
1 1/2TBL yeast
1 1/2 tst salt
1/4 cup veg. oil
11/2 cups whole wheat flour
4 1/2 white flour cups flour
To make the white rolls just use 6 cups of white flour and 2/3 cup of white sugar.  Guess you could do it 1/2 & 1/2 like above but I have not tried it that way yet!

Warm water with the sugar and honey  in it, add to the yeast mixture and let sit until the yeast starts to bubble and get foamy.  Add the oil and salt and and the wheat flour and 1 cup of white flour.  Mix in the KA and then add remaining flour until all is incorporated and the dough becomes soft and elastic and cleans the bowl.
Put in a greased bowl and cover until doubled.  When ready punch down gently and then form into rolls by rotating and tucking as you go, do not play with the dough to long or they will not rise as well this time.  Set on parchment lined or grease cookie sheet about 2 inches apart and cover until doubled in side.  Score the tops with an X just before  cooking.  Cook for about 20-25 minutes until golden and sound hollow when taped.  My oven took about 25 minutes my daughters took about 19-20.



Now don't they look good.

Salsa Verde Burgers

I recently came across this ingredient and have used it in several recipes.  It gives a very nice added spice to food and dressings.  Give it a try.  Sunday night I was craving grilled hamburgers so I decided to try this in them along with some sauteed onions and garlic, they all came together nicely and the flavor was nice and the salsa made the burgers very moist (another added plus).  My family loves cheese so they also had American White Cheese added.  I served these on homemade burger buns made from this recipe along with my macaroni salad and a green salad. (tomatoes from the garden)

Ingredients:
1- 1 1/2 lbs. ground beef
1 can Salsa Verde
1/2 Sweet Onion diced and sauteed
1 clove garlic (for cooking with onions)
salt and pepper

Take enough meat to make the size patty you want, flatten then add about 1 TBL salsa verde and 1 TBL onions.  Mix and form the patty (it will be very moist).  Grille and when just about ready add cheese if desired.  You can add additional onions and salsa if you want.  Enjoy

A quick Bread Fix

This recipe is from Kay's kayotic kitchen, she loves bread as much as I do.  Her site is here
I won't write much about this other than it's quick, easy and very satisfying if you need a bread fix in a hurry.She is correct when she says to eat it straight from the oven with butter slathered all over it.  OMG wonderful.

Ingredients:
2 cups flour
2 oz butter
1/2 tsp salt
1 tbsp baking powder
4 oz aged cheese  *(I used asiago)
2 tsp dried parsley
1/2 tsp dried thyme
2 tsp dried (red) onion flakes *I have not found these in the US) so I used dried reg. onion flakes
1 tsp chili flakes
1/2 cup milk + 2 tbsp
1 egg

Directions:
Combine 2 cups all-purpose flour with 1/2 a tsp salt, 1 tbsp baking powder and sieve it.  Cut in the butter.  Add 1 tsp dried chili flakes for a little extra kick (this won’t make it hot, it will just add some zing you can omit it if you like), 1/2 a tsp dried thyme and 2 tsp dried parsley.    Mix it all up. 
Add the grated cheese to the flour and butter mix.  Lightly beat an egg, combine it with the milk and pour it in. Mix it up with a fork. 
Sprinkle a little flour on a cutting board (or your counter top) and transfer the dough. It’ll be quite crumbly at this point. 

Start kneading until you have a supple dough. Shape it into a round shape.  Line a baking tray with baking paper and place the dough on top. Cut a deep X into the top of the dough.  Bake in preheated 400 F oven for approximately 30 minutes.
This would be wonderful in the winter time with some homemade potato or cheese and broccoli soup or I guess any homemade soup.
And the piece ready to eat.
