Golden Raisin-oatmeal cookies w walnuts

I made these awhile back.  A very tasty cookie and well worth making.  Hope you try them.

Ingredients
 ¼ cup unsalted butter 
6 tablespoons neutral flavored oil (canola, melted coconut, etc.)
1 teaspoon vanilla extract
½ cup granulated sugar ¼ cup plus
2 tablespoons brown sugar
1 large egg
2 cups old fashioned oats + ¼ cup hot water
1 cup all purpose flour
 1 tablespoon ground cinnamon
½ teaspoon baking soda
 ½ teaspoon salt
⅓ cup each: dried golden raisins, chopped pecans or walnuts, chocolate chips



Instructions
 1. Preheat the oven to 350.
 2. In a bowl, combine butter, oil, and vanilla. Mash until butter is soft. Add in sugars and stir to cream them together, and then stir in an egg. 
3. In a separate bowl, combine oats and hot water and let it sit for 5 minutes until oats are slightly softened. Add them to the wet mixture. 
4. Add in flour, cinnamon, baking soda, and salt, and stir to combine it all with the wet mixture. Add in your mix­ins (no more than 1 cup of total assorted mix­ins). 
5. Refrigerate dough for at least 10 minutes.
 6. Measure out tablespoon­sized cookies, and bake them onto parchment lined cookie sheets for 12 minutes, or until the bottoms are golden. 
7. Let the cookies cool fully before removing them from the baking sheet.

Chewy Chocolate Chip Oatmeal Bars

Monday work treat, not much to say about this other than it was really good.





Chewy Chocolate Chip Oatmeal Bars
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Yield: 16 bars
Ingredients

2 C flour

1 tsp baking soda

1 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
2 1/2 C old fashioned oats
1 1/2 C brown sugar
1 1/4 C butter, melted
2 eggs
1 Tb vanilla
2 1/2 C milk chocolate chips

Instructions

1. Preheat your oven to 350 degrees.

2. Into your stand mixer or large mixing bowl place 2 C flour, 1 tsp baking soda, 1 tsp baking powder, 1 tsp salt and 1/2 tsp cinnamon. Toss them together with a fork to combine.

3. Grab 2 1/2 cups Old Fashioned Oats and add them to the mixing bowl.
4. Add 1 1/2 C brown sugar and toss everything together to mix.
5. Melt 1 1/4 C butter and pour it into the bowl. Mix for one minute.
6. Add 2 eggs and 1 Tb vanilla.
7. Mix until the dough has combined. It will be crumbly.
8. Add 2 1/2 C chocolate chips. I used milk chocolate, but semi sweet, butterscotch or cinnamon chips would also be fabulous. Mix the chips in.
9. Spray a 9x13 pan with cooking spray and press the dough into it.
10. Bake for 20 minutes. Stick a butter knife or toothpick into the center. When it comes out clean the bars are done. Don't worry if they look a little bit underdone. They should. :) This will help them stay nice and moist.
11. Allow them to cool completely and then cut into bars, or eat them warm from the pan...whatever suits your fancy.

Honey Oatmeal Whole Wheat bread



Trying some new bread recipes these days and found this one on pinterest and thought I'd give it a try.  This bread is worth making, it's very tasty, great for breakfast toasted with some butter and your favorite jelly, jam or peanut butter and also it's wonderful as your sandwich bread.  Let's not forget it's also very healthy.  I will be making this bread again.  The changes I made are in red.

Whole Wheat Oatmeal Bread
(Adapted from  Sunny Side Up)
1 cup water
1 cup milk  (1/3 cup 1/2 and 1/2 and 2/3 water)
1 heaping TBL active dry yeast
1 TBL honey
2 TBL molasses
2 1/2 cups white whole wheat flour
2 cups  AP flour or bread flour
1 cup rolled oats
4 TBL unsalted butter, melted and cooled slightly
1 TBL salt
Additional oats for topping the loaf (optional)
** if you use AP flour add 1 TBL Vital Gluten I forgot to  add this, I used AP flour and it came out great as you can see.



Directions:
Prepare a 9×5 loaf pan by lightly buttering or spraying with non-stick spray.
In a microwave safe measuring cup, heat the  water till lukewarm, about 115˚F.
In your mixer bowl combine the yeast and 1 cup of flour (either one) stir til combined.  With your paddle  add  the water,  and honey, beat on high speed for about 1 minute.  Let stand for about 10 minutes *the mixture will bubble up. In microwave heat the milk and and butter to 115 degrees, then add this the  molasses and salt, change to your dough hook.  Add your flours and the oatmeal 1/2 cup at a time and let the machine knead for about 6 minutes.
 The dough should climb the dough hook and slap around the sides of the bowl without sticking. If the dough sticks to the sides of the bowl add a more flour a tablespoon at a time, if it seems like the dough isn’t coming together (too dry) do the same thing with a tablespoon of water.
Cover the mixing bowl with a clean towel and place in a warm, dry place (an oven with the light turned on is a great place) and let rise for 1 1/2- 2 hours, or until doubled in size. If you poke the dough and the poke stays then you know it’s ready.
To shape the loaf, transfer the dough to a lightly floured surface. Knead the dough for 1 or 2 minutes and then let it relax for a minute. Shape the dough into a flat square. Fold one side of the dough into middle, then fold the other side to meet it in the middle. Pinch the seam then roll the dough back and forth a little to form a log. Transfer the dough to the bread pan, seam side down.
Cover the loaf with a towel and let rise for another hour. While the dough is rising, preheat the oven to 400 degrees. After the dough has risen lightly mist with water and sprinkle additional oats on top. Bake for 35-40 minutes, rotating the pan halfway through, until the crust is brown and when you tap on the loaf it sounds hollow. Allow the loaf to cool on a wire rack . Remove from pan when completely cool.

White Chocolate Oatmeal Raisin Cookie



These are cookies that my daughter made over the Holidays.  I just love their flavor so of course had to make more.  There is just enough hint of orange, the dough freezes well too.  Just either put the entire batch in a plastic bag and write the instructions on the outside or make the balls and freeze them on a cookie sheet and when frozen place them in a plastic bag, of course with the instructions on the outside.  You can keep these frozen for about 4-6 months so when company happens buy you could pop them into the oven and have fresh homemade cookies to serve.

Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup plus 2 Tbsp. unsalted butter, softened
1/2 cup granulated  sugar
1/2 cup firmly packed light brown sugar
1 large egg
1 teaspoon fiori di sicilia or orange extract (see note)
1 cup uncooked regular oats
8 ounces white chocolate, chopped (about 2 cups)
1/2 cup raisins or golden raisins 
1/2 cup chopped pecans or walnuts (optional)

 Directions:

Combine first 4 ingredients in a medium bowl.
Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Beat in egg and orange flavoring just until combined. Add flour mixture and oats; stir until blended. Stir in white chocolate and raisins. Cover and chill dough 1 hour, if desired.
Line 2 large baking sheets with parchment paper. Drop batter by heaping tablespoonfuls, 3" apart, onto prepared baking sheets.
Bake at 350° for 13 to 15 minutes or until lightly browned. Cool on baking sheets 5 minutes. Transfer cookies to wire racks to cool completely.
Prep: 10 min.; Cook: 15 min. per batch; Other: 5 min.

Soft Oatmeal Cookies



This is one of my all time favorite cookies.  They are soft and chewy and stay that way (unless you mess with the dough too much when making the shape of the cookie.  Also if you roll them in sugar they will tend to be a little harder)  So guess the option would be up to you if you want a soft cookie or a hard one.  They store well and the dough could be froze for up to about 3 months.  You can also add raisins (what is an oatmeal cookie without raisins I ask?)  and some chopped nuts of your choice.

Ingredients:

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 - 1 cup raisins *Optional*
1/2 - 3/4 cup chopped nuts *optional*
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground
cinnamon
3 cups quick cooking oats
Directions:

In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar. or roll in sugar and then flatten with fork (gives a harder cookie)

Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
