lime and blackberry scones

A While back our local grocery had limes on sale, which I bought...was a great buy about 15 limes for $1.49, can't pass that up.  So now what to do with all these limes.  I've made a couple of different recipes and this was one that was really good.  Oh yeah BTW the same grocer had blackberries on sale too so bought those also.  Then went searching for a recipe that might combine the two and this is what I found.    Took these to work and they were a big hit.  I do but them smaller since the guys at work would eat all of them if there were just

Blackberry Lime Scones

Fresh blackberries and a vibrant pop of lime make these scones irresistible!

Ingredients

2 and 1/2 cups all purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 granulated cup sugar
2 teaspoons lime zest
1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
1 large egg, beaten
1/2 cup + 2 tablespoons whole milk
1 cup blackberries, fresh or frozen (If using frozen, do not thaw first)
For the egg wash:
1 large egg, beaten
1 teaspoon milk or water
2 tablespoons granulated sugar, for sprinkling
For glaze:
2 tablespoons fresh lime juice
3/4 cup confectioners sugar

Instructions

  1. Preheat oven to 400°(F). Line a large baking sheet with parchment paper; set aside.
  2. In a large bowl, add flour, salt, baking powder, baking soda, sugar, and lime zest; whisk well to combine. Quickly cut the butter into small cubes then work them into the mixture (using your fingers, two forks, or a pastry cutter) until lit resembles a coarse meal. Set aside.
  3. In a small bowl, whisk together the egg and milk, then add to flour mixture. Use the fork to stir everything together until just moistened.
  4. Add blackberries and gently stir into dough. Don’t worry if some of the berries break up a bit.
  5. Empty the loose dough out onto a clean, floured work surface, then shape the dough into an 8-inch circle.
  6. Cut the dough into 8 wedges and carefully transfer to the prepared sheet.
  7. Lightly brush each scones with the egg wash, then sprinkle the top of each scone with sugar.
  8. Bake for 18-20 minutes, or until light golden brown.
  9. Allow scones to cool on the baking sheet while you make the glaze.
  10. For the glaze:
  11. In a small bowl whisk together the lime juice and confectioners sugar. Drizzle over warm scones and serve at once.

Chocolate Blackberry cookies with a hint of caramel





I had some blackberry puree left from my last baking adventure.  the Blackberry muffins, well I didn't want it go to waste so I made these.  I combined 3 different recipes to come up with this one.

Heat oven 375

Ingredients:
1 cup butter, softened
3/4 cup white sugar
3/4 cup packed brown sugar
1/2 cup blackberry pureed *or what you want*
1/2 cup chocolate melted and cooled *you can use chips, bar or bars with creams in them...I used 1/2 bar of Hersey with caramel  and some dark chocolate.
2 eggs
3 cups flour
3/4 tsp salt
3/4 tsp baking soda
1 tsp. vanilla extract

Directions:
With mixer or KA cream sugars and butter til creamy.  Add eggs 1 at a time,  blending well between each.  Add chocolate, vanilla and blackberry puree, blend well.  Combine flour, salt and  baking soda add to other mixture a little at a time til all is incorporated,   Drop by teaspoon on an ungreased baking sheet (I always use parchment paper, easy cleanup)  Bake for 10-12 minutes until they start to brown on the edges, remove and put on wire rack to cool.



Oh I just tasted one, very yummy and nice texture, not real soft and not hard at all.  Hope you try these, a quick easy cookie for an after school snack for the kids or for a brunch or a JUST BECAUSE for yourself and your family.

Blackberry Muffins


 A couple of weeks ago I made these for a bake sale for my grandson's Football team .


 

I adapted a recipe from Land O Lakes.
 INGREDIENTS:
1 cup milk
1/2 cup butter, melted
1 egg, slightly beaten
2 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup fresh blackberry pureed (you could use frozen blackberries or raspberries)


 Heat oven to 400°F. Combine milk, butter and egg in large bowl. Stir in all remaining muffin ingredients except blackberry puree just until flour is moistened. Then add blackberry puree, stirring gently.



Spoon into foil or paper-lined 12-cup muffin pan. Bake for 24 to 28 minutes or until golden brown. Cool slightly; remove from pan.



Dip top of each muffin in melted butter, then in sugar.
Now don't they look yummy.  These are delish, while still warm have them  with some butter or guess you could put some blackberry preserves on too.
