I had some blueberry pie mix I needed to use and had 1 sheet of pie crust. I was going to make something I saw on FB that was made in ice cube trays but I didn't have any. Then I thought well I could make a small braid dessert. Then when I was turning on the oven I saw my mini cast iron skillet and thought OH I can made a pie in there. Just the right size for 1 also. I also had a small cast iron cookie skillet so use that one too. Aren't the just the cutest!

Dutch Apple Pie
I made this for Thanksgiving Dinner this year. I can't remember the last time I made a pie. I used to make them all the time for the holidays. This is a different take on a Dutch apple pie. It was really good. I used Gala apples so the pie is not a tart one. Give it a try. Sorry I forgot to get a shot of it cut.
Ingredients
Ingredients
- 1 pie crust, homemade or bought, 9"*homemade it better*
- FILLING:
- 3 lbs apples, peeled, cored and cut into slices
- 4 Tbsp butter (50 g)
- ½ cup brown sugar
- ½ cup white sugar
- 2 Tbsp water
- 2 Tbsp flour
- 1 Tbsp cornstarch
- 1 tsp cinnamon
- a pinch of nutmeg
- zest of ¼ lemon
- 1 tsp vanilla extract
- CRUMB TOPPING:
- ½ cup ground almonds
- ½ cup rolled oats
- ⅔ cup brown sugar
- ⅔ cup flour
- ½ tsp cinnamon
- 6 Tbsp butter (80 g) cold
Instructions
- FILLING:
- Melt butter in a large pot. Add brown and white sugar and water and stir to combine.
- Add flour, cornstarch, cinnamon, nutmeg, lemon zest and vanilla and mix until incorporated.
- Add apple slices and mix carefully until apples are coated with the sauce. Pour into the pie crust.
- TOPPING:
- Put almonds, rolled oats, brown sugar, flour and cinnamon in a food processor. Process until you get fine crumbs. Add butter and pulse a few times. Sprinkle evenly over pie filling. (To get larger crumbs, squeeze topping with your fingers.)
- Bake for 45 minutes in preheated 350 F (175 C) oven.

Frozen Strawberry Yoguart Pie
I made this for Easter Dinner this year. We had dinner at my grandson's (a first). Usually we have dinner at our house, but since he has his own place he wanted to cook. We had ribs, brats and
This is one of my grandson's favorites, which I didn't know. It's so easy and makes for a very quick dessert. It's wonderful during the summer months when you need somethings sweet and cool.
Ingredients:
2 containers
(6 oz. each) strawberry nonfat yogurt
2 cups
thawed COOL WHIP Whipped Topping
1 ready-to-use graham cracker crumb crust (6 oz.)
8-10 fresh strawberries
8-10 fresh strawberries
Directions:
Spoon yogurt into medium bowl. Add whipped topping; stir gently with wire whisk until well blended. Chop 6-8 strawberries and fold into cream mixture Fill pie crust. Top with sliced
strawberries. FREEZE 4 hours or until pie is firm enough to hold its shape when cut into slices to serve. Store leftover pie in refrigerator.
