These are wonderful, and very easy. The have just the right amount of orange flavor. I also tried using lemons, Yuck to much pith and it leaves an after taste. Was a good idea but not a tasty one. :) May try it with just the juice from lemons and let you know. I found this recipe here.
I altered the recipe a bit, I used whole wheat flour and some quick oats. The original recipe called for all white flour. Trying to cook a bit more healthy.
They are very moist, sure hope you'll try them. It's a great way to use up oranges, peel and all, who would have thunk?? :)

Ingredients:
Servings: 12 regular muffins or 6 large muffins
1 orange, quartered and seeds removed (with peel)
1/2 cup orange juice
1 large egg
1/2 cup butter or 1/2 cup margarine (I used butter)
3/4 cups AP flour
3/4 cup whole wheat flour
1/4 cup quick oats
3/4 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
Directions:Preheat oven 400 degrees. Line muffin tins or spray with cooking spray and set aside.
In a food processor or blender, (I used a blender) add orange and orange juice, puree. Add the butter and egg and mis until blended. Pour into a large bowl.
Combine all dry ingredients and add all at once to orange mixture. Stir until blended. Fill muffin cups 3/4 full. Bake for 20-25 minutes until tester comes out clean. Let set for 5 minutes and remove from pan. ENJOY.

Your Orange muffins look lovely. I wish I could eat one right now. I presently live in Scotland, so the addition of quick oats appeals to me.
